2.0 oz. portabella mushrooms, diced
1/2 c. green bell pepper, diced
1/4 c. feta cheese, crumbled

Here is how you make Summer Scramble:

Lightly coat a pan with cooking spray. Add in the bell peppers first to give them time to soften a little. After about 3 -5 minutes add in the sun dried tomatoes, following by the portabella mushrooms. Mix well. Spray the cooking spray 1-2 times and then add the egg whites on top. Add your seasonings to taste. Mix well until the eggs are well done. Add the feta cheese last, mix one final time, then serve.
