Then add 2 fresh eggs and 6 tablespoons of egg whites, and mix them together. Stir occasionally until eggs are cooked. Flatten mixture evenly and top with mozzarella cheese. Let cheese melt partially, then fold one half of the mixture over the other (to form an omelette). Cut in half and serve.
