Here is how you make Potato and Spinach Frittita:

Coat your skillet with the cooking spray and put the spinach and potatoes in on high heat. Add the egg beaters and sprinkle the top with the cheese. Cook until the egg looks set along the bottom. Transfer the whole pan into a 350 degree preheated oven and bake for about 15-20 minutes until the top is set and golden. Makes about 2 servings.
