Here is how you make Spinach, Tomato, Cheddar Frittata:

Preheat oven to 350F.Whip Eggs with milk and salt and pepperChop shallots and slice tomatoes. Using an ovenproof skillet, heat 1.5 tbsp of olive oil. Saute shallots for 2-3 minutes until translucent. Add spinach and saute until limp. Add tomato slices a cook for 1 more minute.Add egg mixture to pan and stir so that the spinach and tomato mixture is evenly spread throughout the pan. Drizzle remaining olive oil over the top and continue to cook on low-med heat for 3-4 minutes. Place pan in oven and cook until eggs are set. Approximately 5 minutes.Let cool slightly.
