1 package (8 oz) Extra Sharp cheddar cheese
1/4 cup diced green bell peppers
1/4 cup diced onions
6 slices of thick sliced bacon

Microwave the spinach for 2 1/2 minutes on high. Drain the excess liquid.Line 12-cup muffin pan with foil baking cups (I use stoneware pan, no liners). Spray the cups with cooking spray.Grate cheese. Put approx. 1/4 cup off to side (to put on top of cups before baking)Combine the egg substitute, cheese, peppers, onions and spinach in a bowl. Mix well. Divide evenly among the muffin cups.Cut bacon in half, and cook to desired crispiness.Crumble one halved bacon piece into each muffin cup, mix into egg mixture.
