Here is how you make Vegetarian Frittata:

Preheat oven to 400 degreesIn food processor using S Blade grind Oatmeal until a flour texture. Remove to a storage container and wipe out processor.In same processor with S blade add Green and Red Pepper Chunked and a wedge of onion (white, red or both) chunked. Process 2 to 3 times until chopped. Don't over process. Plafce in storage container. Beat 2 eggsStir in:1 Tbsp Oat Flour1/4 Tsp Baking Powder1 Tbsp Low Fat Feta Cheese2 Tbsp of Pepper Onion MixtureSalt and Pepper to tasteSpray non-stick pan with Cooking Spray OR add a slight dusting of flour to cooking spray to avoid sticking. Pour ingredients into pan and bake for 10 minutes. Check for doneness. Bake longer if necessary.
