Here is how you make Veggie Breakfast Scramble:

Saute tomatoes and peppers in nonstick skillet over medium high heat until peppers begin to soften slightly but retain some crunch. Add spinach on top of veggies and continue cooking without stirting until spinach begins to wilt. Combine eggs and whites in bowl, stirting to mix well. Stir veggies, add mixed eggs, and reduce heat to medium. Cook through, stirring to prevent burning and sticking. Season with salt and pepper to taste. Serve hot. For extra flavor, add 1-2 tablespoons crumbled low-fat feta or shredded cheddar cheese on top of scramble on individual servings.
