Put aside on a plate. In the pan, spray olive oil in the pan. Saute mushrooms, spinach, and tomatoes for about 3 to 5 minutes ( do not burn ). Place on top of the eggs. Place swiss cheese on top and let melt over hot veggies and eggs. Sprinkle with salt and pepper to taste. I enjoy with a big cup of coffee, wheat toast with sugar free preserves, and active yogurt.
