Here is how you make Basic Veggie Frittata:

Preheat oven to 400 degrees. Oil a small cast iron or small oven-safe frying pan with 1/2 tsp olive oil. Whisk eggs together in a medium sized bowl or measuring cup. Chop tomatoes, zucchini and shallot. Saute shallot vegetables in 1/2 tsp of oil and add to eggs. Pour egg mixture into oiled pan and cook on stove top until sides have set.
