Beat eggs in separate bowl. Chop vegetables. Saute mushrooms and red pepper in olive oil in a small skillet. Add spinach and scallions and saute until spinach is wilted. Add beaten eggs and cover skillet for about 3-4 minutes until eggs are puffed up.
