1/4 cup Bell Pepper, chopped (I used Yellow)
1/4 cup Mushrooms, sliced
1/5 cup Spinach, fresh
1/4-1/2 tsp Smoked Paprika
a few dashes of Fresh Ground Black Pepper
4 medium Eggs
2 medium Egg Whites
1/2 oz Feta Cheese, crumbled

Here is how you make Veggie Scramble w/ Smoked Paprika:

1. Heat the olive oil over medium-high heat. Toss in garlic and stir until aromatic (just about 30 seconds)2. Toss in onion & bell pepper to sautee3. Once onion begins to soften, toss in mushrooms, spinach, smoked paprika and ground pepper. Sautee until spinach wilts and cooks through and mushrooms release their juices.4. Beat together the eggs and egg whites, then pour over the veggies in the pan. Stir occasionally for about 5 minutes.5. Sprinkle crumbled feta over egg & veggie mixture. Continue stirring/scrambling for about another 5 minutes (or however long depending on how cooked you like your scrambled eggs).I was looking for a high-protein, decent calorie brunch after a hard workout, so I only calculated this as 2 servings. It could easily make 4 smaller helpings if preferred.
