In a large bowl mix together egg, sugar substitute, milk and vanilla extract. In another bowl mix together the dry ingredients. Slowly add in the dry ingredients into the egg mixture. Add in water as needed when the mixture becomes too thick. Add in banana and mix throughly. Fill muffin tin (either sprayed with Pam or paper liners) about 2/3 full of the mixture.
