Excellent crustless quiche, hodge-podge of several recipes I saw online. Has a rich flavor, but surprised me with how low in calories 1/4 of the fritatta was! One-fourth is a HUGE slice. There are some easy modifications to make it lower in fat and cholesterol, but be careful not to skimp on the oil in the iron skillet or you could have your fritatta stick. I have purposefully calculated in its richest form, and you can reduce from there. Possible ways to reduce calories and fat would be to: only use the egg whites from half of the eggs, use less cheese, or omit bacon. I have a picky husband, so I'm presenting this recipe as I make it (and end up eating it)!

*1/3 block of sharp white cheddar (about 6-cu. inches)
*1 piece of bacon, fried and crumbled
*10 oz. of fresh or frozen broccoli, cooked
*Dash of worcestershire sauce
*Pinch of salt
*Dried onion and garlic powders (optional)
*Black pepper (to taste)
*2 tbsp of olive oil

Here is how you make Sharp Chedder and Broccoli Fritatta:

Preheat broiler. Broccoli should be cooked ahead of time and cool to the touch.In a blender, gently mix the egg, cheese, broccoli, and spices thoroughly. You don't want to foam the eggs or make a puree, so I use variable speed 2 on my vita mix (this is a low speed). Then, in a 10-in cast iron skillet, fry up bacon in 1-2 tbsp of EV olive oil. Use 1 tbsp if bacon is raw, or 2 tbsp if bacon is already cooked and pre-crumbled. Ham would be a good substitute also. When meat is cooked or heated (1-5 minutes, depending) pour mixture into skillet. Keep on medium heat about 8-10 minutes (mine cooks in 8 over gas), until the bottom of the fritatta is very firm and there is only a little runny batter still on top. Then, place under broiler for 5-7 minutes (7 minutes under gas broiler for me).When solid and nicely browned on top, remove from oven, and let rest for 3-5 min before serving.
