1/4 onion, finely chopped
1/2 c shelled edamame
1/2 c frozen corn
5 eggs
2 scallions, diced
4 oz. goat cheese with herbs
salt and pepper to taste


How Do I Make Edamame, Corn and Goat Cheese Frittata?

Here is how you make Edamame, Corn and Goat Cheese Frittata:

Preheat oven to 400 degrees. Heat butter and oil in an oven-proof saute pan over medium-high heat. Add onion, edamame and corn and saute until browned, about 5-8 minutes. Meanwhile, in a medium mixing bowl, whisk eggs, salt and pepper together. Stir in scallions. Pour egg mixture over edamame, corn and onions. Crumble goat cheese evenly over eggs, reduce heat to medium and cook an additional 5 minutes. Place pan on upper oven rack and bake for 4 minutes or until top of eggs are set.
