2 cups fat free cottage cheese
10 pack frozen spinach
1/2 cup chopped green onion
salt and pepper to taste
1/4 cup grated parmesan
1/4 cup crumbled feta cheese


How Do I Make Crustless Spinach and Cheese pie?

Here is how you make Crustless Spinach and Cheese pie:

In a saute pan cook onion, thawed spinach( squeeze out water in paper towel), and any other veggies you might be adding. Adjust amout to fit into a standard pie plate leaving room for cheese and egg mixture.After all water has cooked out and onions are tender, pour into a prepared pie plate. In a separate bowl mix beaten eggs, cottage cheese, parmesan cheese, salt and pepper and perhaps any other spices you prefer. Pour over the veggies and top with crumbled feta. Add a dusting of freshing ground black pepper.Cook in a preheated oven 350 degrees for 45 - 60 minutes. Check back towards end of cooking time - this will very depending oven and any substitutions you might have made . Cook until pie is nicely browned and eggs are completely firmed up. Remove from oven and let sit at lease 5 minutes before serving.Serve with a fresh fruit salad or later in day with a lovely leafy green salad for brunch. Original recipe asked for 2 cups of grated cheese to be added. I have omitted this.Instead I substituted the feta cheese to add some flavor.
