Beat four eggs in a separate container. If you want to lower the stats, try using one or two yolks instead of using all four yolks.Shred up some cheese- it doesn't have to be the same kind that I have used here, or even the same amount. Whatever you like is good.Add the cheese, chopped onion, and any other ingredients you are using to the egg mixture.Spray a skillet or pan with non-stick cooking spray, and heat over med-high heat.Add the egg mixture to the pan, let it sit for a few seconds, then stir constantly with a spatula, occasionally breaking it up into smaller pieces.Cook until the eggs no longer look wet. The underside may be slightly browned. The whole cooking process only takes about 5 minutes.I have entered this as a two-person meal- it will, of course, have less calories and fat. It will also be a little better to use reduced-fat or fat-free cheeses. These are just suggested ingredients, but they are EXTREMELY tasty, especially served with ketchup!
