2 oz Reduced Fat Feta Cheese
8 Corn Tortillas, medium (approx 6" dia)

How Do I Make Green Eggs and Gobble?

Here is how you make Green Eggs and Gobble:

In a blender or food processor, add the husked tomatillos, jalapeno, chopped scallions, cumin, and lime juice and puree until smooth. In a large skillet, cook the turkey sausage in the olive oil over high heat until browned, about 4 minutes. Add the minced garlic and cook for 30 seconds, until fragrant. Add the tomatillo puree and cook over moderate heat until the sauce is thickened and dull green, about 10-15 minutes. Then stir in fresh chopped cilantro. In a separate skillet spray pan with cooking spray and add egg beaters seasoned with salt. Cook eggs until slightly soft then stir in tomatillo sauce from other skillet and cook a few minutes. Top with reduced fat feta cover and remove from heat. Warm corn tortillas slightly and spoon into Tortillas. Serve Immediately.
