The ingredients for Blueberry Muffins are:

Stir together:
1/3 c sugar
zest of 1 lemon

Preheat oven to 425
Spray Muffin tin (dozen) with cooking spray

Simmer:
1c. Blueberries
1tsp sugar
-simmer and mash...down to a little more than 1/4 cup, set aside to cool
Whisk together:
2 1/2 c. flour
2 1/2 tsp baking powder
1 tsp salt

In separate bowl, mix until well combined:
1 1/8 c. sugar
2 eggs

Whisk in:
1/4 c. canola oil
4 tbsp melted unsalted butter
1 c. lowfat buttermilk

Fold above wet ingredients into flour mixture along with:
1 c. blueberries

-Spoon mixture into muffin tins, filling to the top.
-Put about a teaspoon of reduced blueberry mixture on the top of each muffin, swirling in with a skewer or knife (no need to be gentle!)
-sprinkle lemon/sugar on top.

Bake 17 minutes or so, rotating halfway if you don't have a good convection oven. Let cool for about 5 minutes before taking out of the pan.
