Pre-Heat oven to 325F.Grate the zucchini (careful of the fingers) and place in a large mixing bowl. Add sugar, applesauce, vanilla and egg whites. Stir together until they are well mixed.Combine flour, cinnamon, baking soda, salt, baking powder and nutmeg in a bowl. Slowly mix in with zucchini mixture. It will be a very wet mixture.Place muffin liners in the muffin tin and then spoon in the batter so the muffins are pretty even. Bake for about 35-45 minutes.
