I use this to get rid of old, black bananas that haven't been eaten. People do eat these, and the love them and they're good for you. I think you can substitute applesauce for the oil (tho I haven't tried it), and sugar for the Splenda or Twin, and eggbeaters for the egg. I've tried it once, and think it would taste better with pecans and cinnamon swirled in, but these are excellent, anyway.

1 c. Fiber One cereal
1 c. raisins
3 tbsp. sugar or Sugar Twin
1/4 c. olive oil
1 egg

How Do I Make Fibernana Muffins?

Here is how you make Fibernana Muffins:

In large mixing bowl place 1 cup Fiber One cereal and 1/2 cup milk. Mix in 2 to 3 pureed over ripe bananas and let stand 5 minutes. After 5 minutes, add sugar, raisins and mixture of olive oil and egg. Add flour and mix to even consistency. Bake in greased muffin tins for 20 to 25 minutes at 425 degrees or until tops are lightly brown. When done, loosen from muffin tin and let cool.Makes 9 large or 12 medium muffins.
