16oz sliced cremini mushrooms
1 cup Shredded Carrots
1 medium Zucchini, diced
1 medium tomato, diced
1/2 bag of Trader Joes' Organic Green Power Salad
4oz Fat Free Crumbled Feta
8 large eggs
1 1/3 c. Egg Whites
1/2 tsp. salt
1/2 tsp. black pepper
1/2 tsp. thyme
1/2 tsp. marjoram
1.5oz Salame, diced
1 oz parmesan cheese
2 Avocados, sliced


How Do I Make Mushroom Feta Frittata?

Here is how you make Mushroom Feta Frittata:

Preheat oven to 375. Heat oil in a large oven proof saucepan, saute mushrooms and carrots, on medium heat stirring occasionally. When they have softened, add zucchini, greens and tomato. Cover and cook about 3-5 minutes or until zucchini is softening and greens are wilted. In a large bowl, beat eggs, egg white, feta, spices and salame. Pour egg mixture into pan, lower heat to medium low, cover and time for 10 minutes.Remove lid, sprinkle parmesan over top of frittata. Place pan in oven and cook about 15 minutes, or until mixture is cooked through.
