This is a slightly modified version of a Weight Watchers recipe. I used 1/2 cup of whole wheat flour and 1 cup all purpose instead of only all purpose flour. In a large bowl, combine the flours, baking soda and salt; stir well. In a medium bowl, whisk together the egg yolks and sugar until well combined. Stire in the buttermilk and butter; stir into flour mixture until well combined. In a clean medium bowl, beat the egg whites with an electric mixer or wire whisk to stiff peaks.
