Here is how you make Cinnamon Pancakes:

Mix flour, splenda and baking soda in a bowl, in another bowl - beat eggs, milk and vanilla essences then combine with the mixed dry ingredients. Use a 1/4cup of mix per pancake - makes 16 pancakes approx 4 inch diameter. Use a non-stick fry pan, put in 1/4cup mix and cook, when lots of bubbles appear on top of pancake, flip over and cook for a further two minutes.I like to eat two pancakes with lite butter and some tinned peaches (the pancakes are very filling).
