This is an easy hash brown casserole, and is really great. It's not healthy by any means, but if you stick with a measured half-cup serving, it's not the worst thing for your health.This is a staple for our family brunches and Thanksgiving / Christmas morning. You can easily make it the night before and then pop it into the oven the next morning. You could easily substitute low fat / fat free ingredients as well, but I've calculated it using full fat ingredients since that's what I had on hand.
