Spray a frying pan with Pam and add the microwaved potato diced into the pan for about 5 minutes to get it crispy on the outside. Add the sausage crumbles and warm up for 3 minutes, while that is cooking mix the 2 eggs and 4 egg whites and beat into a bowl. Pour over potato and sausage mixture. Cook for a few mintues on low heat till done to your satisfaction. (If using Turkey bacon microwave the pieces as directed on package and crumble up and drop into the pan).
