Here is how you make Spinach/Red Pepper Frittata:

Water saute red pepper and garlic until soft. Add spinach and saute until just wilted. In a pie dish melt butter in 350 degree oven. Add vegies and 3/4 of the cheese to pie plate. Pour eggs over the top. Bake in 350 degree oven for 20-25 minutes. Turn oven off and sprinkle last 1/4 of cheese on top and leave in oven just long enough to melt.
