Toss to coat, and set aside for 30 minutes. Meanwhile, prep the pineapple, pepper, onions, and wash lettuce. On medium heat, heat grill pan, add half the oil, and chicken. Cook through. Remove chicken to a plate, and add pineapple to same pan. Cook until light grill marks show, about 1 minute per side. Remove from pan. Add other half of oil, peppers, and cook about 2 minutes, stir, then another 2 minutes. Remove from heat.Arrange lettuce leafs on plate, and evenly distribute all ingredients.
