2 tbsp extra light olive oil

5 tbsp cilantro, chopped
1 cup fresh cabbage, shredded
Red Ripe Tomato, 1 cup diced
4 medium-sized corn tortillas (approx 6" dia)
Salt & Pepper, dash

Here is how you make Fish Tacos:

Saute fillets with 1 tsp extra light olive oil and 2 tsp of chipotle marinade. Wrap in foil and bake at 350 degrees for 40 minutes. Shred with fork when done. (Alternative cooking method - put foiled wrapped fillets in bar-b-que pit; cooked until done.)Garnish mix- - in a bowl add shredded cabbage, cilantro, diced tomato, 1 tbsp of chipotle marinande, lime juice, and balsamic vinegar.
