4 green apples, peeled, cored and chopped
1 tsp sugar (or sucralose (see hint))
1/2 tsp ground cinnamon
2 tsp gelatin
3 egg whites


How Do I Make Apple Snow?

Here is how you make Apple Snow:

Put the chopped apples, sugar, cinnamon and 3 tablespoons water in a saucepan. Simmer, covered, for 8 minutes or until tender. Mash until pureed. Sprinkle the gelatin over 1 tablespoon of water in a small heatproof bowl and leave to go spongy. Put the bowl in a pan of just boiled water off the heat (the water should come halfway up the bowl). Stir to dessolve. Stir into the hot puree. Beat the egg whites until stiff peaks form, then fold into the hot puree - the heat should slightly cook the whites. Spoon the mixture into glass bowls or parfait glasses, and chill before serving. hint: if you have diabetes and prefer to use sucralose insteat of sugar, then you can substitute the sugar with 1/2 tsp sucralose.
