Super ripe bananas gives this bread wonderful flavor. I sub 1/2 the sugar for Splenda, but you can substitute all as well. What Are The Ingredients For Jen's Banana Bread Recipe?The ingredients for Jen's Banana Bread are: 3 large ripe bananas, mashed (about 2 cups mashed)2-1/2 cup flour 1 cup sugar (or all Splenda) 1 cup Splenda 2 eggs (or, I use 1/2 cup eggbeater eggs) 1 tsp vanilla (optional) 2/3 cup butter or margarine, melted (I've subbed applesauce here before) 2 tsp baking soda 1 cup chopped pecans (or walnuts work well) OPT - I've also added some chocolate chips to 1 of the loaves and it tastes good. And, this is an easy recipe to sub can pumpkin (and a bit of pumpkin pie spice) with instead of banana... good that way also. :) How Do I Make Jen's Banana Bread?Here is how you make Jen's Banana Bread: Mix all ingredients together. Pour into EITHER 2 greased and floured loaf pans (or sprayed with Pam Flour, which is what I use) OR 1 bundt pan. Cook at 350 for 1 hour or until toothpick comes out clean. Serving Size: makes approx 16, unless cut slightly thinner.
