1 tbsp lemon juice
1 2/3 cup whole wheat flour (I used Power Flour from Tosca's book)
1 tsp baking powder
1/8 tsp sea salt
1 cup cold butter, cut into small pieces
2 cups oats
2 large eggs, slightly beaten
1 1/4 cups raw cane sugar


How Do I Make Banana Fingers?

Here is how you make Banana Fingers:

Preheat oven to 350 degrees.Peel and slice bananas thinly. Cover with a mixture of lemon juice and cold water.Combine flour, baking powder and salt in a large bowl. Use a pastry blender to cut butter into flour until mixture looks like fine crumbs.Stir in oats and sugar. Mix in the eggs and blend until the mixture becomes a stiff dough.Put half into a 13x9 inch baking pan. Press down firmly. Add drained sliced bananas in a thin layer on top.
