Here is how you make Baked Blueberry Banana Almond Oatmeal:

Combine banana, eggs, sugar, almond extract, salt and baking powder. Whisk in soy milk. Stir in oats and 1/2 cup chopped almonds. Lastly, stir in blueberries. If using frozen blueberries, make sure to keep them frozen until the very end and stir them in gently so that they don't turn the whole batch purple! And you can substitute any type of berry, or nut, you like. Finally, spray an 8?8 baking dish with non-stick spray and bake in a pre-heated oven at 375 degrees for approximately 45 minutes or until the top is golden brown and the center is no longer wet to the touch.
