Preheat oven to 375˚ Prepare mini muffin cups with non-stick spray.Mix dry ingredients (pudding mix, flour, sugar, baking powder) until blended, then add eggs, vanilla, applesauce, and instant coffee dissolved in 1 cup hot water. Blend well. Mix in chocolate chips. Spoon about 1.5 tablespoons of mix into each mini muffin cup. Bake for 10-15 minutes. Allow to cool and sprinkle with powdered sugar. Makes 36 bites.
