3 tsp gelatine powder
2 Tbl warm water
1/2 cup elderflower syrup
1/2 cup vodka
1 cup water
1 Tbl caster sugar
250g blueberries
1/4 cup caster sugar, extra
1/2 cup water
1/2 cup mint leaves
1 Tbl shredded lemon zest


How Do I Make Blueberry and Elderflower Vodka Jellies?

Here is how you make Blueberry and Elderflower Vodka Jellies:

Place the gelatine and water in a bowl and stir to combine. Set aside for 5 minutes or until gelatine is absorbed. Place the elderflower syrup, vodka, water and sugar in a saucepan over medium heat and stir until sugar is dissolved. Add the gelatine and cook, stirring for 1-2 minutes or until the gelatine is dissolved. Set aside to cool.Divide half the mixture between 4 x 2 cup capacity glasses and top with half the blueberries. Refrigerate for 1 hour or until set. Top with the remaining mixture and refrigerate for a further 2-3 hours.Place the extra sugar and water in a small saucepan over low heat and stir until the sugar is dissolved. Increase heat and boil for 2-3 minutes. Set aside to cool completely. Place the remaining blueberries, mint and lemon zest in a bowl with the cooled sugar syrup and mix to coat.
