Preheat oven to 350 degrees.Melt chocolate with butter. (Do not burn.) Let cool.Beat eggs well, gradually adding sugar. Beat until mixture is fluffy and thick (depending on mixer used, could take 5-10 minutes). By hand, stir in vanilla and cooled chocolate mixture.Fold in flour and salt (and walnuts, if using).Using a 1/4 c. measure, add batter to muffin cups. Bake for 20-25 minutes in 350 degree oven. (Halfway through baking, turn pan 180 degrees and continue baking.) Top should be shiny and firm to touch. Do NOT overbake. Bakes into 15-16, 2" muffin cups/liners. Let set on rack to cool in muffin pan for 20 minutes. Remove from pan and cool on rack.OR pour batter into greased 9 x 13 x 2 pan (using PAM spray). Bake for 25-30 minutes. Cool completely.
