Preheat oven to 350 degrees.Prepare apples and place into large bowl with raisins, walnuts, sugar and Splenda. Let stand 30 minutes.In separate bowl, sift together flour, baking soda, and cinnamon. After 30 minutes (to let moisture develop in apple mixture), add egg whites, oil, and vanilla to flour mixture, then start mixing in apple mixture.Turn into 9" x 13" pan sprayed with cooking spray. Bake for 35 to 40 minutes. When cool, cut into 32 pieces to make into cookie bars.
