1 1/4 cup sugar, divided
1/2 cup brown sugar
1 cup flour
1/4 cup + 1 1/2 tbsp cocoa
1 tbsp butter
1/2 cup milk
1 tsp vanilla
1/2 cup chopped nuts ( I prefer pecans to walnuts)
1 tsp baking powder
1/8 tsp salt
1 1/4 cup boiling water


How Do I Make Amphibian Cake?

Here is how you make Amphibian Cake:

Cream 3/4 cup sugar and butter together. Add milk and vanilla; mix well. Add flour, baking poder, salt, and 1 1/2 tbsp cocoa. Mix thoroughly. Pour batter into 8x8x2 inch oiled pan. Cover batter with 1/2 cup nuts. In a bowl, mix brown sugar, 1/2 cup sugar, and 1/4 cup cocoa. Spread evenly over the batter and nuts. Over the top of this, gently pour 1 1/4 cup boiling water (I usually use closer to 1 1/2 cups so it doesn't seem so dry). Bake at 350 on a lower rack for approximately 30 minutes.
