Very good homemade cake. Not a box cake with i ngredients you can't even pronounce. You can alter this basic recipe. I sometimes use Anise Seeds mixed into the cake, omit the crumbs, bake it and then cut it into biscotti type cookies and bake at 325 until nicely browned. The thickness of the cookie is up to you. BTW 2 Tbl of corn starch added to the flour make cake flour! Since it is only me and my husband, I wrap each piece in saran wrap, put it in a ziplock bag and freeze. They thaw out fast and are delicious

1 cup flour
1/2 cup sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt

Whisk together well and then in another bowl:

1 scant cup milk
1 egg
1/4 cup Canola Oil
1 tsp. vanilla extract
1/8 tsp almond extract
Whisk well so all wet ingredients are blended, then mix wet into dry and beat well with whisk for about one minute. Pout into a prepared 8 x 8 square pan. Then
Whisk the flour, sugar and then the melted better butter (or butter or margarine)until it holds together when pinched.
Take a handful and squeeze and then break little pieces onto the top of the cake batter. Bake at 350 for about 35 minutes (check with toothpick). Remove from oven and let cool til just warm. Mix the powdered sugar with just enough milk so that it can be drizzled over the top of the cake. Cut into 12 pieces.
