Here is how you make Spring Cake:

1- To make cake: Preheat oven to 350 degrees. Mix cake mix, oranges, eggs, and applesauce for 3 to 4 minutes. Place mixture in a greased 11x15 cookie sheet. Bake for 15-25 minutes. Start checking for doneness at 15 minutes. Cake is done when the edges begin to pull away from pan and when you can lightly touch the center of the cake and it springs back. Remove from oven and cool.2- For Topping: Stir pineapple, pudding, lemon extract, and Cool Whip together. (Do not mix with electric beaters). Spread over cake.
