2 c diced rhubarb
1 large egg
1 large egg yolk
1 c cream (I used raw cream)


How Do I Make Decadent Rhubarb Cake?

Here is how you make Decadent Rhubarb Cake:

Preheat oven to 400 degrees. Place parchment paper on large baking sheet.Combine diced rhubarb and 3 T sugar in small bowl.In a food processor, combine dry ingredients. Add diced butter and pulse until coarse crumbs form. (Not too long). Move this mixture to a large bowl.Add rhubarb & sugar mix to the large bowl with dry ingredients and butter combination.Combine egg, yolk and cream in food processor and pulse to combine.Add to to the large bowl, gently combining all ingredients. Spread batter on parchment paper, trying to get a uniform depth of about .5 inch. Bake for approximately 20-25 minutes.
