Preheat oven to 350 degrees. Spray cake pan or bar pan with non-stick spray. Cream together the sugar, eggs, vanilla, and oil. Mix well. Add flour, salt, soda, baking powder, cinnamon and mix well. Fold in zuccini. Put into either 9x13 cake pan for cake or 11 x 15 bar pan for bars and bake at 350 degrees for 35 minutes.
