Beat cream chees, Stevia and almond extract until fluffy. Add the egg whites, 3 Tbsp (1 "egg") at a time, blending well. Beat at low speed until blended.Pour into 12 silicon muffin cups. Arrange them either on a microwavable plate or, if you have a turntable in your microwave, take it out, arrange on that, & return.Nuke for 12 minutes on power "6" (medium high) - if you don't have a turntable, then turn every 5 minutes. The cheese mixture will be a bit soft in the center, but will set up in the fridge.Mix topping ingredients together & spread evenly on the top of each cup.Refrigerate for several hours.Serving Size:?Makes 12 "muffin" cups
