2/3 cup granulated sugar
1 tsp vanilla extract
2 large eggs
1/2 cup sour cream

Here is how you make Toni's mini cheesecakes:

Preheat oven to 350 degrees. Spary 4 deep pot pie plates (11.1 cm x 2.3 cm) or 12 muffin cups with cooking spray. To make crust:combine graham cracker crumbs, vanilla wafer crumbs, sugar and melted butter. Press crumbs firmly on the bottom of the pie plates. Cover and refrigerate until filling is complete.Filling:In a large mixing bowl beat cream cheese on low speed until smooth. Add the sugar and beat until smooth. (Don't forget to scrape down sides). Add eggs individually, beating until mixed, add vanilla extract and sour cream and beat until thoroughly mixed. Divide mixture evenly in the pie plates or muffin pans.Bake for 20 minutes (if using 12 muffin pans or 40 minutes if using pie plates, or until firm but the centres still wobble a little. Remove from oven and let cool, then cover in plastic wrap and refrigerate for a few hours or overnight.Remove by running a metal spatula along the sides of the cheesecake.To make garnish:Either use fresh blueberries or1/2 cup blueberries1/2 c strawberries2 tsp sugarMix together and bake at 400 degrees for 10 minutes until soft.
