Heat milk until nearly boiling. Place egg yolk in larger bowl. Begin to stir with whisk, then gradually add the hot milk a little bit at a time, whisking all the while until about 1/3 of the milk has been added. Stir in the rest of the milk and the remaining ingredients. Place in the refrigerator to chill. After about an hour, the chia will have gelled the mixture to a pudding consistency, but will still be a bit crunchy inside. Leave several hours if you want it softer. Number of Servings: 2
