Preheat oven to 350 degrees.Spray a 9" round cake pan with vegetable cooking spray (not including in calorie calculation). Set aside.In a small bowl, combine buttermilk, applesauce, oil, egg, and vanilla. Mix well. Set aside.In a large bowl, combine flour, granulated sugar, 1/2 cup cocoa powder, and baking soda. Stir to break up lumps. Add buttermilk/applesauce mixture. Whisk until smooth about 1 minute. Pour batter into prepared plan.Bake until a toothpick inserted in center comes out clean, about 35 minutes. Cool in pan on a wire rack for 20 minutes.
