In another bowl cream together shortening, applesauce, splenda and sugar together. Add eggs to wet mixture. After eggs are mixed in add the canned pumpkin. Once well mixed together slowly (1 cup at a time) add dry ingrediants to wet until all mixed together. Add vanilla and chocolate chips and mix. Place dough on greesed cookie and pat down to spread out. Bake at 375 degrees for 10 minutes. (Time may vary on heat of oven.) Makes 96 1 Tablespoon cookies. *Tip: use the lip of the non-stick spray can (pam) to flatten down cookies. Spray the top of the lid so the dough will not stick.
