Here is how you make Cinnamon Raisin two minute muffin:

Soak raisins in hot water for 45 minutes to plump. In a small mixing bowl, sift almond flour, flaxseed meal, cinnamon, baking powder, salt and sweetner. Drain raisins, reserving water. Cut raisins in half and add to bowl with flour mixture. In another bowl, wisk reserved raisin water and egg together. Mix well with flour mixture. Swirl coconut oil around a 4" ramekin to coat and add remainder to batter and mix again. Pour batter into ramekin and microwave on high for two minutes.
