Here is how you make Mme McG's Cherry Coconut Balls:

Drain cherries and set aside. Cream the sugar, almond extract, cream cheese, and yogurt. Add coconut and xantham gum, mix well. Chill for 10-15 minutes. Take 1 tablespoon of the mixture in your hands and flatten it out. Place a cherry in the middle and wrap the mixture around it to complete cover the cherry. Set on a baking sheet lined with parchment paper and sprinkled with 1/4 cup coconut. Refrigerate until firm, about 2 hours. Store in an airtight container in the fridge for a week, or freeze for a couple months. Serving Size:?1 ball
