Make the dough on a food scale with ONE smallish bowl. No measuring cups to wash!

Cream together with hand mixer:
95 grams Granulated Sugar
40 grams Butter, unsalted
45 gram(s) Butter, Smart Balance Light

Add to bowl and mix with hand mixer:
1 large Egg Yolk
1/4 tsp Vanilla Extract

Sift into bowl and fold flour and butter/sugar/egg mixture together by hand:
115 g Flour, all purpose flour
1/4 tsp Baking Soda
1/8 tsp Cream Of Tartar
pinch of salt

See ingredient list to make dough. Wrap dough in wax paper and refrigerate for 45 mins. Preheat oven to 350 degrees. Form dough into 9 walnut sized balls. Put on a parchment or Silpat lined cookie sheet and put into middle rack of the oven. Bake 6 mins and flatten balls with a fork Turn cookie sheet Bake another 6 mins. Remove from oven and let cool on the cookie sheet for 5 minutes. Move to a cooling rack and let cool another 5 minutes.
