How Do I Make Quick and Easy Cobbler?

Here is how you make Quick and Easy Cobbler:

Preheat oven to 375 degreesCombine sugar, flour and spices and set asideSelect fruit that is ripe but still firm to touch -Cut about half of the Nectarines into chunks and place in casserole or baking dishAdd half the blueberriesSprinkle about half of the sugar mixture over and mix togetherSprinkle with fresh lemon juice (1/2 lemon)Cut the remaining nectarines and add to mixtureAdd remaining blueberriesAdd additional sugar mixture - you may have some left over - Sprinkle with remaining lemon juice (the other half lemon)Fruit mixture should be mounded slightly higher than rim of the baking dish.Take out premade pie crust and roll out - I like to roll it thinner than it comes out of the box.Using a sharp knife - cut the pie crust into 1 inch strips, then weave them across the top of the cobbler in a basket pattern. I usually have about 5 across each way.Bake for an hour or until fruit is bubbling.Remove to cool.Makes approximately 10 servings - almost all fruit - you can cut back the sugar significantly, but my son likes his a bit sweeter!Also good topped with vanilla non fat yogurt for added calcium boost.Number of Servings: 10Recipe submitted by SparkPeople user DEBFOUR.
